Ingredients:
- 250–500 g beans (soaked overnight)
- Pork Shank and bacon, to taste
- 5 carrots, chopped
- 2 onions (yellow or purple), chopped
- Few garlic cloves
- 1–2 potatoes (mix varieties if you like)
- Optional: parsnip, cucumber, lentils
- Spices: smoked paprika, salt, pepper, basil, Provence herbs
- 2 soup cubes
- Water or stock
Serve hot with bread, chili, raw garlic, or cabbage salad.
Instructions:
- Saute onions & garlic until golden.
- Add meat, sear on all sides.
- Add carrots & other veggies, pour in water/stock to cover.
- Season with paprika, salt, pepper, herbs, and optional soup cubes.
- Simmer on medium-low for ~3 hours until beans are tender.
